COOKING / homemade gingerbread

These are seriously easy, my kiddos love helping. Tip: when using oils in cooking, less is more :) 125g butter 1/2 cup, firmly packed Brown Sugar 1/2 cup golden syrup 1 egg, separated 2 1/2 cups plain flour 2-3 drops of Ginger oil 1 teaspoon bicarbonate of soda 2-3 drops of Ginger oil to your gingerbread. Preheat oven to 180°C. Brush 2 baking trays with melted butter to lightly grease or line with baking paper (thats what I do) Use an electric beater to beat the butter and sugar in a bowl until pale and creamy. Add the golden syrup and egg yolk and beat until combined. Stir in the flour, ginger oil and bicarbonate of soda. Turn onto a lightly floured surface and knead until smooth. Press dough into a disc. Cover with plastic wrap and place in the fridge for 30 minutes to rest. Place the dough between 2 sheets of baking paper and roll out until about 4mm thick. Christmas Rocky Road

This is very popular at our HQ and it never lasts long. I made this on the weekend because Piper asked that he has it for his class party. this time we added in a few drops of wild orange and wow.. so so yum. Not sure how much will be left for Thursdays class party. Christmas Rocky Road 2 x 180g pkts milk chocolate, chopped 1 cup white marshmallows, halved 1/2 cup allens red and green snakes. 1/2 cup M & M's - we pick out the red and green ones.. tee hee 1/4 cup (20g) desiccated coconut. . Start to melt the chocolate in a double saucepan. Chop up the snakes and marshmallows in a bowl. Add in the coconut and M&M's Once the Chocolate is melted add in a few drops of wild orange or the good ol peppermint oil if you like. Then pour the chocolate over the top and mix with a melt spoon. Spoon it in a lined slice tray and refrigerate. then cut into square and wrap in cellphone with some ribbon  :)
